Acorn Squash

I love when I can use the leftovers… The following night! This is how the acorn squash recipe came about.

The night before we had when I call just pasta bake! Pasta bake has some kind of tomato-based sauce, browned hamburger, cooked pasta, garlic, and cheese (and whatever else yummy stuff you might want to add... I like mushrooms but my husband hates them therefore they don't get put in the dish). All this is layered in a big baking dish and baked in the oven until the cheese is melted!

So there's your first night dinner! When I make this pasta bake I always have leftovers and my family is horrible about eating leftovers. So if I can make another dish with the leftovers it is a bonus! 

Enter acorn squash! 

I split the squash in half, baste it with grapeseed oil and seasoning and bake cut side up at 350 for 30-35 min! 

Then take out of the oven add your left over pasta bake (I microwave it before so it's already warm), sprinkle a little cheese on top and bake for another 5-10 min until cheese is melted!

My new go-to snack!

So at work they have the peanut butter Greek yogurt dip and it's so good, but also pretty spendy! I mentioned how I loved it in the office... And someone said that it was easy to make!  So I attempted and it is delicious! 



Peanut butter Apple dip
Greek yogurt
Peanut butter 
Honey

I have no idea how much, I just mixed it together! I would say start with the yogurt and then use about 1/3 the same amount of peanut butter, then add honey to taste!

Parmesan Encrusted Butternut Squash

Last weekend we went to the local farms and got pumpkins and squash! I hadn't really cooked butternut squash before but at work a few weeks ago they had some and it was delicious! I decided it was time to learn how to cook it because it was yummy! So here is my first attempt! 

I first used Pinterest to find how to cut one easily... And there were great directions on there!
Cut both end off and then peak with a potato peeler! Yep it worked fabulously! 
Then chopped it into squares! Took a couple hand fulls since it was just me eating it... 

Tossed it in a bowl with:
(I didn't measure...sorry)
Roasted Garlic infused grapeseed oil
Dash of pepper 
Dash of salt 
Parmesan cheese 

Preheated oven to 375 degrees! Cooked for 30 min flipping half way through! 

Then added a touch more Parmesan sprinkled over the squares and broiled on 450 for 1.5 min!

Serve and eat!

Zucchini pizza boats- yum yum

Zucchini pizza boats- yum yum

Zucchini pizza boats 
2 zucchini 
3oz tomato paste
Garlic seasoning 
Olive oil
Ham
Mozzarella
Cut zucchini in half, carve out middle just a bit to make a boat!
Spray zucchini with oil
Broil for about 3-5 min
Take out of oven 
Mix tomato paste with garlic season and a little water to thin out then layer on zucchini boats
Add ham to zucchini boats
Add mozzarella to boats
Broil again until cheese starts to brown! 
Ready to eat!
